Earlier today my boyfriend and I had mango coconut chicken with Jasmine rice and lemon water. It was by far the best thing I had in a long time.
I made myself Jasmine rice – my favourite! I decided to also make Peanut sauce to have with my rice. It’s really fast and easy! Another plus it doesn’t require that many ingredients.
- Place a few tablespoons of peanut butter in a microwaveable bowl. The time will depend on how much peanut butter you add and your microwave. I put mine for 42 seconds. I wouldn’t do anything that goes over a minute.
- Add lime juice, however much you desire.
- Sprinkle red pepper flakes or another spice you like
- Mix it and serve.
