Catching Up

Today I was fortunate enough to catch up with a friend whom I haven’t seen in a little while. It was a really nice hang out. We went for a walk in my neighbourhood.

She inspires me to be a better person. I am working on becoming more organized. Seeing her definitely helped. I admire her way of life. Everything in her house is so simple but in an elegant kind of way.

Today, I will spend time with someone who inspires me.

This is something I am working on. I am focusing on creating myself a better person than I was yesterday.

I am trying not to worry as much as I do. I am learning to embrace the now.

Making the Most of Things

Since I didn’t go to work I made the most of it by catching up with my boyfriend’s family.

It was very enjoyable. Then after that I ended up watching the Princess Diaries and the Princess Diaries II whilst waiting for my boyfriend to finish work.

Today, I will make time to do something I have meaning to do.

Penne With Peppers and Sausage

I made my boyfriend and I this amazing dish!

His brother was even nice enough to carry the groceries from the grocery store because it was really heavy.

Everything was just about ready when he walked in from work.

We had multigrain penne with sauté onions and peppers with hot turkey sausage as well as garlic bread.

We thoroughly enjoyed this meal. 🙂

Healthy Living

I have been concerned about my memory because I have been having a few difficulties keep track of everything. Perhaps it’s just the season, or not sleeping through the night.

I’m only in my 20’s so that means I have to take care of myself. This is something I have been striving for. I eat an apple a day, I try to get seven or so hours of sleep a night and exercise.

I should also be focusing on my memory and doing brain activities to improve my brain function.

Today, I will strengthen myself by doing something that will benefit me. These activities include running, reading, lifting weights anything else that is active.

Yesterday marked the 52nd anniversary of John F. Kennedy’s assassination. Ironically that is the weekly quote in my day planner.

This is my absolute favourite from Robert Kennedy.

Jasmine Rice With Peanut Sauce

I made myself Jasmine rice – my favourite! I decided to also make Peanut sauce to have with my rice. It’s really fast and easy! Another plus it doesn’t require that many ingredients.

Directions

  1. Place a few tablespoons of peanut butter in a microwaveable bowl. The time will depend on how much peanut butter you add and your microwave. I put mine for 42 seconds. I wouldn’t do anything that goes over a minute.
  2. Add lime juice, however much you desire.
  3. Sprinkle red pepper flakes or another spice you like
  4. Mix it and serve.

I got the recipe from Rachel Ray. I love that girl! 🙂 I remember my Dad gave me one of her cookbooks for Christmas. ❤

Follow Your Heart

Today I called my Dad to tell him about how well I did at bowling and then we started talking about sports. We love sports! My favourites are hockey and football but I also like baseball and basketball.

My brain is consumed with football right now!

I enjoy watching and following sports. My boyfriend and I were debating about going to a baseball game next year. It something that we were thinking about but haven’t decided yet.

Today, I will do something that will bring me a step closer to my dreams.
